I think the success of the on site shop also depends upon whether there are campers /touring caravans/pods/glamping on site too. As well as pub, arcade, chip shop pool etc which means there is no need to leave the site (if that's what you're looking for).
My previous site had all of the above (except pods/glamping) and it's shop was always very popular and still is now.
Buckets spades, flip flops, wetsuits, newspapers, beach equipment, portable bbqs, coals, gas, camping equipment, small gifts, etc etc oh and food too! The prices are quite good too.
Nearest supermarket is 10 mins drive too... Interesting...
