My Spanish friends traditionally make chorizo sausage between Christmas and new year. The men do the mincing and the ladies do the stuffing....(so they say).a bit like an English Pantomime, at the same time of year.

Iasked them how they did it, and i think they said, --first you buy your peeg, then you ave to keel heem, then you ave to put heem een ze meencer. But my Spanish is quite basic.
